Barbecue in Cuba is not like barbecue in the USA. Ground pits may be dug or a rotisserie over a huge fire sets the stage for the master production of barbecue (usually pork) in Cuba. Use of large banana leaves and other secrets seal in the flavor and juices of the meat while side dishes of rice and black beans, desserts and beverages are prepared. Numerous articles and books about barbecue in Cuba have been written and many are available over the Internet. While in Cuba, enjoy the local barbecue if you happen upon it!!!
